Purple Rain starts with a unique process: strict hand sort, only perfectly ripe coffee cherries making the cut. They're sealed into tanks with fresh blackberries and wine yeast for a 48-hour dry anaerobic fermentation, where blackberries develop the compote nature and wine yeast unlocks the complex tannic acids. Washed, then dried for ten days, and precision roasted.
Taste and see this one of a kind blackberry co-ferment coffee, dripping with blackberry compote, burnt sugar sweetness and pinot noir mouth feel.
