What makes this coffee one of a kind?
This limited microlot is the result of a 30 hour dry anaerobic co-ferment; where oxygen is removed to intensify flavour, and fresh peaches are introduced to infuse the coffee with their natural sugars and aromatics. This process is designed to push flavour boundaries and sweetness.
Gently washed and dried at low temperatures, the result is, a big peachy punch. Delivering tasting notes of golden peach candy, tropical sweetness, and a soft coconut finish.
Grown by Luz Helena Salazar at Maracay Farm in Colombia, this lot represents over 20 years of dedication to craft and innovation. Luz has become a leading force in experimental processing, working closely with Cofinet to produce standout coffees while uplifting her local community.
