Our Whisky Barrel Aged Coffee is months in the making. Green coffee beans, including those from our direct trade partners in Uganda, rest in a freshly emptied Thomson Manuka Smoke Whisky barrel, slowly absorbing bold whisky character.

The Result? Big whisky vibes with notes for 90% Dark Chocolate, oak and smooth vanilla finish.

Flat rate $5 NZD, free on orders over $45 (rural addresses add a $5 surcharge regardless of order size). We aim to dispatch same business day (next day at the latest) for orders in before our 9am cut-off. From there, expect 1–2 business days North Island, 2–3 South Island, plus a day or two extra for rural addresses. You'll get a tracking link the moment it's out the door.

Returns
Because coffee is a perishable product, we can't take change-of-mind returns once it's shipped. But if something arrives faulty, damaged, or wrong, we'll fix it - full refund or replacement, and we'll cover the return shipping too. coffee meets whisky - the process

It starts with a barrel. Empty whisky barrels are rare in New Zealand. Rarer still when they've held Thomson's Manuka Smoke Whisky. Every year, Mat Thomson puts a few aside for us, and every year we make the trip out to the distillery to collect them.

Back at the roastery, we fill each barrel with a blend of Colombian, Brazilian and Ugandan beans from our direct trade partner Tom in Uganda. Then we wait. For months, the barrels sit and roll around the roastery floor, the green coffee slowly drawing out the whisky soaked deep into the oak. The manuka smoke, the aromatic oils, the residual character left behind in the wood grain. We keep a close eye on temperature and humidity the whole time, because barrel ageing rewards patience, not shortcuts.

Only once the beans have taken on that full whisky character do we roast them fresh. A roast profile designed to highlight what months in the barrel created, not cover it up. What comes out the other end is unlike anything else being made in New Zealand: Big whisky character, 90% dark chocolate depth, and a smooth vanilla finish.

Crafted by technique and time, refined by character. That's the whole process.

Two Westie Artisans committed to thier craft

This coffee only exists because of a distillery ten minutes down the road. Thomson Whisky is a small-batch craft distillery making single malt whisky from just water, yeast and malted barley, smoked with native manuka wood and South Island peat, and run through copper pot stills. They're not chasing recipes from Scotland or anywhere else. They're figuring out what New Zealand whisky can be, on its own terms.

That same spirit of doing things properly is why we partnered with them. Empty whisky barrels are hard to come by in New Zealand, and Thomson is one of the few commercial distilleries producing them at all. Every year, Mat Thomson sets a handful aside for us once they've finished their work maturing whisky.

Why is Whisky Coffee special?

Because it's not just roasted, it's aged. Green coffee goes into a freshly emptied Thomson Manuka Smoke Whisky barrel for months, absorbing the manuka smoke, the aromatic oils, and the whisky character soaked deep into the oak. No shortcuts, no rushing it — barrel ageing only works if you let it work. What comes out the other side doesn't taste like coffee as you know it. It tastes like 90% dark chocolate met a dram of Manuka Smoke Whisky, finished smooth with vanilla. Only a handful of empty whisky barrels exist in New Zealand each year, so this is coffee doing something it normally can't

How long will shipping take?

1-2 days nationwide. Fast enough that the anticipation won't outlast the wait.

How long will this be in stock?

Honestly, we don't know. Our last limited release sold out before we planned. If this one hits the way we think it will, it won't hang around either. Grab it while it's here.

Where and when was it Roasted?

Right here at Mt Atkinson Roastery, New Lynn, West Auckland. Roasted fresh, with the date on the can. Whisky coffee can get better with a little time. Tasting notes often open up around 2 to 4 weeks after the roast date.

How do I keep my coffee fresh?

Keep it sealed and stash it somewhere cool and dark. Got more than you'll get through fast? Freeze it. It'll keep that blackberry compote magic locked in and ready whenever you are. Rest the beans for 1 to 2 weeks after the roast date so they degas before going into the freezer.

COLD BREW RECIPE

Makes 1 Litre

Ingredients:

100 grams of Mt Atkinson Whisky coffee

500ml cold water

Vanilla Syrup and Ice

Instructions:

  1. Coarsely grind coffee (like raw sugar)
  2. Add water and coffee together in a glass vessel, stir to incorporate. A cold pot or Plunger works well too.
  3. Brew coffee in fridge between 12-24 hours. Overnight for 15 hours is ideal.
  4. Stain the coffee grounds out.
  5. Transfer into clean glass vessel and store concentrate in fridge for up to two weeks.

To serve:

Dilute coffee concentrate with 1:1 water ratio (still or sparkling). Stir in vanilla syrup to taste, pour over ice.
