At Jairo Arcila's farm in Colombia only the ripest coffee cherries make the cut. They're transported to his La Pradera processing centre in GrainPro bags or specialised tanks to keep things fresh, then floated to remove any low-density beans or stray material. The water gets recycled through the process, and once it's done its job, it's filtered and returned to the land through vetiver grass beds. Nothing wasted, nothing contaminated.
Then the real experiment: 72 hours of dry anaerobic fermentation, pulp still on, watermelon added straight into the tanks. That's where the juicy watermelons, ripe strawberry flavours come from.
After fermentation, the coffee cherries are pulped, leaving the sticky, honey-like mucilage intact (hence "honey process"). They're spread thin on the concrete patio, turned regularly, and dried down to 9.5–11% moisture, the exact point we're after.

Its a one of a kind co-ferment blend. This Speciality coffee blend is made up of two coffees: Colombian Watermelon Co-ferment, Honey Process, produced by Jairo Arcila. Ethiopian Yirgacheffe Konga, Natural Process, grown by a collective of 800 small-scale farmers at altitudes of 2000m. They are blended for complexity and a deeper sweetness. Bursting with juicy watermelon and strawberry, rounding out on chocolate and brown sugar. Sweet, juicy & balanced. Properly refreshing, with a clean aftertaste.

Honestly, we don't know. Our last few limited release co-ferment sold out in weeks. If this one hits the way we think it will, it won't hang around either. Grab it while it's here.
Right here at Mt Atkinson Roastery, New Lynn, West Auckland. Roasted fresh, with the date on the can. Co-ferments only get better with a little time fruit-forward notes often open up around 2 to 4 weeks after the roast date.
Keep it sealed and stash it somewhere cool and dark. Got more than you'll get through fast? Freeze it. It'll keep that blackberry compote magic locked in and ready whenever you are. Rest the beans for 1 to 2 weeks after the roast date so they degas before going into the freezer.

1. Pour 115g water @ 4.4g/s (valve open) 0:00 – 0:32 mins

2. Close valve around 0:32 mins (close by water level)
3. Pour to 170g water @ 4g/s, finish pour at 0:52 mins, 0:32 – 0:52 mins
(170g total)
4. Open valve at 0:52 + 1 gentle vortex turn
5. Pour to 240g water @ 3.8g/s, 1:10 – 1:50 mins
(240g total)
5. Close valve at 1:50 – 2:00

Time: 1:38-1:45 mins
Instructions:
1. Pour 95g water @ 4.4g/s (valve open) 0:00 – 0:24 mins

2. Close valve at 0:24 mins
3. Pour to 140g water @ 4g/s, 0:24 – 0:48 mins
(140g total)
4. Open valve at 0:48 + 1-1.5 gentle vortex turn/s
5. Pour to 180g water @ 3.8g/s, 1:03 – 1:40 mins
(180g total)
5. Close valve at 1:40 (or when bed is just exposed)
